How should I book chargebacks and refunded sales tax in my Shopify store?

I run an online accessories store from the UAE through a Delaware LLC. We use Shopify Payments and some orders come through the Shop channel. Revenue is around $140,000, but chargebacks and partial refunds are becoming more common. My accountant says I am overstating revenue because I only book net payouts.

I need a simple way to think about chargebacks, refunds, and any sales tax the platform already handled so I do not make the same mistake all year.
